Just installed latest QCAD. Simple drawing. Add a dimension and it shows as per attached image. Have used Qcad on and off for years for doing simple drawings. Not a professional designer. Never had this problem before.
Ubuntu 20.04.1

Ashley,
What font is set for the label off dimensions?
See Drawing Preferences >> Dimensions >> Dimension Settings >> Label >> Label Font
This could be changed unintended by scrolling over the Preference page.
Mouse wheel scrolling is also used in drop down boxes ... ;-)
Avoid to point inside the widget, best habit is to point at the scrollbar when scrolling.

CVH
Most probably your font is set to 'Symbol_Astro'.
Then the first 6 glyphs do match '11000' and a dot as decimal separator.
