As a learning exercise I will create my own layout blocks to get familiar with the process as this is not a cheap copy of AutoCad and things work differently. In order to be able to help you effectively, please attach the relevant drawing to your post as required by the forum rules

You can use "Text" instead of the dim label formating.

"Delete" the dim label with using just a keyboard "Space" for it.
Type and align the desired multi line text in the text tool/dialog and position it to the now empty dim.

Sounds like the Qcad configuration is somehow damaged. If you can't figure what could be set wrongly try to reset Qcad to its defaults.

You can adjust the color of that box (and other colors too) under:

Edit > Application Preferences > Graphics View > Colors > ...
