Hi, can you tell me how, if possible, to edit a dimension (measurement) with free type?

You can use the property editor to adjust the label of a dimension:
- Select the dimension
- View > Property Editor
- Change property "Label"

What about symbols, the only thing I have found is called the library editor and seems to contain very little, such as a 'door'.
